Manju

Kubota's flagship. The pinnacle of unconventional craftsmanship. Manju is a masterful blend that combines two contrasting brewing methods to achieve a depth and complexity most sake never reach. Silky and layered, it finishes with a lingering richness that sets it apart.

Manju Original Yeast X

Junmai Daiginjo

A rare, limited release, Kubota Manju Original Yeast X is shaped by decisions most brewers never make. By sourcing locally grown Gohyakumangoku rice and polishing each grain using the proprietary Genkei Seimai method, Kubota ensures quality from field to brew. Fermentation with an in-house yeast cultivated over many years reveals an aroma that's unmistakably expressive. Silky, layered, and complex, this is sake for anyone who appreciates well-crafted nuance.

Kubota Hekiju

Hekiju

Hekiju is what happens when tradition and refinement meet on their own terms. Brewed using the traditional Yamahai method, it develops a natural acidity and rich umami rarely found in a Junmai Daiginjo. The result is bold and layered, with a distinctive character that’s best savored slowly at room temperature or slightly warmed.

Tsugu

The best things take time. Tsugu is proof. Brewed from Koshitanrei rice polished to 35% using the Genkei Seimai method, a technique so precise it's equivalent to 20% by conventional standards. this is not a sake that announces itself. It reveals itself gradually with every sip.
