Pairing Recommendations

Tsugu rewards restraint on the plate. Poached white fish, salt-koji marinated tofu, anything with clean salinity and a soft texture. Bright acidity works too, like a fresh tomato salad alongside either one.

  • For best results, serve chilled at 50-59 °F (10-20 °C).

The first thing you notice is the aroma: strawberry and green apple, crisp and clean. The palate follows with soft, silky restraint. The delicate sweetness doesn't rush toward the finish so much as ease into it. There's fruit, and beneath it, a rounded depth that stays with you after your glass is empty.
