The floral aroma of Junmai Daiginjo lifts the savory, garlic-forward sauce and ties together the richness of egg and avocado.
Peel and pit the avocado and cut it into bite-sized chunks. Tear the steamed chicken breast into pieces by hand. Cut the onion vertically against the grain into 1/4-inch-wide pieces. Mix the sauce ingredients together in a bowl.
Heat olive oil in a frying pan over medium-high heat. Stir-fry the onion for 1 minute. Add the avocado, chicken, most of the sakura shrimp, and a pinch of salt, then stir-fry for 1 more minute. Add the sauce and stir-fry briefly. Reserve a small portion of shrimp for garnish.
Pour in the beaten egg evenly, stir-fry quickly, then transfer to a serving bowl. Garnish with the remaining sakura shrimp, sprinkle with pepper, and serve with French bread if desired.
