The creamy, briny filling plays off Manju's rich, rounded flavor for a satisfying small bite.

Eggs on the Egg

Ingredients (serves 2)

  • 2 hard-boiled eggs

Filling

  • 1 oz mentaiko (spicy cod roe), membrane removed and scraped
  • 1 tablespoon mayonnaise
  • 1 teaspoon water
  • 1/2 teaspoon tobiko (flying fish roe)
  • 1/2 teaspoon ground white sesame

Directions

  1. Step 1

    Halve the boiled eggs and remove the yolks. Mince the yolks roughly.

  2. Step 2

    Combine the yolks with filling ingredients in a bowl and mix well.

  3. Step 3

    Spoon the filling back into the egg white halves. Arrange on a plate and top with tobiko.
