Pinchos of Edamame and Cheese Pickled with Shiso and Garlic Soy Sauce

Ingredients (serves 2)

  • 15 small pieces of processed cheese
  • 10 frozen edamame, thawed and shelled
  • 10 shiso leaves, stems removed and halved
  • Bread of your choice, cut into small pieces

Marinade

  • 1/2 cup soy sauce
  • 2 tablespoons mirin
  • 1/2 teaspoon grated garlic

Directions

  1. Step 1

    Combine the shiso leaves and marinade in a bowl. Add the cheese and edamame and let them soak for at least 1 hour.

  2. Step 2

    Thread one piece of bread, one shiso leaf, one piece of cheese, and one edamame onto a toothpick, in that order, and serve.
