Russian Salad

Russian Salad

Ingredients (serves 2)

  • 2 medium potatoes, cut into 1/4-inch cubes
  • 1 small carrot, cut into 1/4-inch cubes
  • 3 pickles, cut into 1/4-inch cubes
  • 1 hard-boiled egg, finely chopped
  • 1 can tuna (2 oz), oil drained
  • 5 tablespoons mayonnaise
  • 1 tablespoon white wine vinegar
  • Salt, pepper, and olive oil, to taste

Directions

  1. Step 1

    Cut all vegetables, pickles, and the egg as described and drain the tuna.

  2. Step 2

    Boil the carrot and potato in water until tender. Drain and cool.

  3. Step 3

    Combine the mayonnaise, white wine vinegar, and 2 tablespoons of olive oil in a bowl and mix well.

  4. Step 4

    Add the cooked vegetables, pickles, egg, tuna, and dressing to the bowl. Season with 1/2 teaspoon of salt and a pinch of pepper, and mix well.

  5. Step 5

    Taste and adjust salt before serving.
