Sautéed Chicken in Sake Sauce with Lemon

Ingredients (serves 2)

  • 2 chicken breasts (about 5.5 oz each)
  • 0.7 oz butter
  • 3 tablespoons sake
  • Flour, as needed
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 3 sprigs thyme
  • Olive oil, a small amount

Directions

  1. Step 1

    Lightly salt the chicken and dust both sides with flour. Zest the lemon.

  2. Step 2

    Add olive oil, butter, and lemon zest to a cold pan, then place over medium heat. Once the butter melts, add the chicken and cook until lightly browned on both sides.

  3. Step 3

    Add the sake and let the alcohol cook off for about 30 seconds. Add the lemon juice and thyme. Move the pan to emulsify the sauce for about 1 minute. Serve the chicken with the sauce spooned over the top.
