The sake-and-lemon pan sauce emulsified with butter creates a fresh, bright dish that matches the fruity aroma and refreshing finish of Soujo Seppou.
Lightly salt the chicken and dust both sides with flour. Zest the lemon.
Add olive oil, butter, and lemon zest to a cold pan, then place over medium heat. Once the butter melts, add the chicken and cook until lightly browned on both sides.
Add the sake and let the alcohol cook off for about 30 seconds. Add the lemon juice and thyme. Move the pan to emulsify the sauce for about 1 minute. Serve the chicken with the sauce spooned over the top.
