Separate the lettuce leaves, peel and slice the carrot, and prepare any additional mushrooms and greens.
Set up a steamer or wide pan with a rack. Add the sake to the water. Layer the lettuce and other vegetables in the steamer and place the pork slices on top. Cover and steam over medium heat for 5 to 7 minutes until the pork is cooked through.
Serve at the table with ponzu for dipping.
