White Fish, Tomato, and Salted Caper Pasta

White Fish, Tomato, and Salted Caper Pasta

Ingredients (serves 2)

  • 5.5 oz spaghetti
  • 1 to 2 white fish fillets, cut into 1/4-inch cubes
  • 1/2 onion, finely chopped
  • 2 anchovy fillets
  • 0.5 oz salted capers, soaked to remove excess salt
  • 2 sprigs fresh thyme
  • 3 tablespoons sake
  • 2 medium tomatoes, diced
  • 1 tablespoon Italian parsley, finely chopped
  • Zest of 1/2 lemon

Directions

  1. Step 1

    Prepare all ingredients as described.

  2. Step 2

    Heat 2 tablespoons of olive oil in a pan and sauté the onion until translucent. Add the lemon zest, anchovy fillets, and white fish and sauté lightly. Add the sake and let the alcohol evaporate.

  3. Step 3

    Add the drained capers, tomatoes, and thyme. Season with a pinch of pepper and 1/2 teaspoon of salt.
